A staple in my recipe collection for variations of cod, this is an excellent way to prepare any firm white fish!



  • 1 1⁄2 lbs cod fish filets
  • 2 tablespoons lemon juice
  • 1⁄8 teaspoon pepper
  • 2 large tomatoes, sliced 1/4 inch thick
  • 1⁄2 medium sweet green pepper, finely diced
  • 2 tablespoons finely chopped onions
  • 1⁄4 cup dry bread crumbs
  • 1 tablespoon chopped fresh basil or 1/2 teaspoon dry basil, crumbled
  • 1 tablespoon oil

Step 1

Lightly oil a baking dish and lay out the filets in one layer.

Step 2

Add pepper and lemon juice.

Step 3

On top of the fish, place tomato slices.

Step 4

Add onions and green peppers.

Spread flour mixture evenly over tomatoes; sprinkle with basil and bread crumbs.

Step 6

The fish should flake when pierced with a fork after 18-20 minutes in a 350-degree oven.
