How To Make Kittencal’s Chinese Chicken Balls With Sweet And Sour Sauce

INGREDIENTS TO MAKE KITTENCAL’S CHINESE CHICKEN BALLS

 

SWEET AND SOUR SAUCE
  • 1 cup white sugar
  • 1 teaspoon soy sauce
  • 1⁄2 cup brown sugar, lightly packed
  • 1⁄2 cup ketchup
  • 1⁄3 cup white vinegar
  • 3 tablespoons cornstarch
  • 3⁄4 cup cold water
CHICKEN BALL BATTER
  • 1 1⁄3 cups cold water
  • 1 -2 teaspoon sesame oil
  • 1 cup all-purpose flour
  • 1 cup cornstarch
  • 1⁄2 teaspoon garlic powder (garlic lovers add 1 teaspoon)
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons sugar
  • 8 chicken breasts, cut into bite-size pieces
  • oil (for frying)
  • seasoning salt (optional)

DIRECTIONS TO MAKE KITTENCAL’S CHINESE CHICKEN BALLS

Step 1

To prepare the sweet and sour sauce, combine the first 5 ingredients in a saucepan until well combined. In a separate cup or bowl, whisk cold water or pineapple juice with cornstarch until smooth, then vigorously whisk it into the ketchup mixture. Bring the mixture to a boil, stirring or whisking constantly over medium-high heat until it becomes bubbly.

Step 2

Once it reaches a boil, reduce the heat to medium-low and continue to simmer and mix until the sauce thickens. This may take a few minutes, so be patient. Once thickened, remove the saucepan from the heat and allow it to sit at room temperature while you make the chicken balls. If preferred, you can cool the sauce to room temperature and refrigerate it until ready to use.

Step 3

Now, to make the chicken balls, start by combining flour, cornstarch, baking powder, baking soda, and garlic powder in a large bowl. Add water and sesame oil to the dry ingredients and whisk vigorously until you get a smooth batter. Add the chicken pieces to the batter and mix them thoroughly with clean hands until well coated.

Step 4

Heat oil in a deep-fryer or Dutch oven to 375 degrees Fahrenheit (190 degrees Celsius). Carefully dip the battered chicken pieces into the hot oil and fry them until they turn golden brown, which should take about 3-4 minutes. Once fried, remove the chicken balls from the oil and place them on a paper towel to drain any excess oil. If desired, you can sprinkle them with seasoning salt immediately after frying.

Step 5

Finally, serve the delicious chicken balls immediately with the sweet and sour sauce. Enjoy this delightful dish!
