DIRECTIONS TO MAKE FLUFFY MATCHA HOTCAKES
In a sizable basin, mix the flour, sugar, matcha, and baking soda. Once the batter is smooth, whisk in the wet components (milk, yogurt, and egg).
A saute pan should be heated at low heat. Oil the interior of a metal cookie cutter or ring shape that is approximately 3 inches wide. Place the ring mold in the center of the pan and then add the remaining oil to the pan. Place a lid on the pan after pouring the batter into the ring mold until it is 2/3 full. Make sure the lid doesn’t touch the ring mold in any way.
Cook for 5 minutes with the lid on, then remove it and cook for 1 additional minute, or until bubbles appear on the hotcake’s top. Flip the pancake and ring mold carefully, then cook the second side for 5 minutes with the lid on before finishing it off for 1 minute.
Unmold the hotcake by removing it from the pan and running a knife along the inside of the ring mold. Warm with syrup and serve.
