INGREDIENTS TO MAKE ECUADORIAN QUINOA VEGETABLE SOUP

  • 1 1⁄2 cups chopped fresh tomatoes
  • 1 cup chopped red bell peppers or 1 cup green bell pepper
  • 1 cup diced potato
  • 1 cup diced zucchini or 1 cup yellow squash
  • 1 tablespoon fresh lemon juice

  • 2 cups chopped onions
  • 2 tablespoons olive oil
  • 3 cups water or 3 cups vegetable stock

DIRECTIONS TO MAKE ECUADORIAN QUINOA VEGETABLE SOUP

 

Step 1

In a colander with a fine mesh, thoroughly rinse the quinoa before setting it aside to drain.

Step 2

In a big soup pot, warm the oil.

Step 3

Add the salt and onions, cover the pan, and simmer for 5 minutes over medium heat, stirring occasionally.

Step 4

Stir in the potatoes, bell pepper, quinoa that has been drained, coriander, cumin, oregano, pepper, vegetable stock, and tomatoes.

Step 5

Cook for 10 minutes at a simmer after covering and bringing to a boil.

Step 6

When the vegetables are cooked, add the zucchini and simmer for 15 to 20 minutes with the lid on.

Step 7

Add the lemon juice and blend by stirring.

Step 8

Serve.
