INGREDIENTS

  • 4 green bell peppers, tops cut off
  • 1 cup uncooked quinoa
  • 1/8 cup fresh cilantro, depends on your taste
  • 1⁄4 – 1⁄ 2 red onion, diced
  • 1 teaspoon cumin
  • 1 -2 minced garlic clove, depending on your taste
  • 1 teaspoon oregano
  • 3 tablespoons diced green peppers (Make sure the bell pepper tops are chopped up when you cut them off)
  • 1(14 1/2 ounce) can black beans, drained
  • 1(14 1/2 ounce) can of diced petite tomatoes, drained well
  • 1 teaspoon chili powder
  • 1⁄8 cup salsa
  • 3⁄ 4 cup corn

DIRECTIONS

 

Step 1

For a softened bell pepper, boil it for three to four minutes in boiling water.

Step 2

Chicken broth should be used to cook Quinoa, NOT water!

Step 3

Saute onion tops, garlic, and garlic in a saucepan.

Step 4

Cook until warmed through, adding the remaining ingredients.

Step 5

Upon completion, fluff the quinoa and place it in the saucepan with the remaining ingredients.
