INGREDIENTS TO MAKE FARMER’S QUICHE

 

FOR THE CRUST

  • 1 cup long-grain brown rice (uncooked)
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1 egg
  • 1⁄4 cup unsalted butter, melted

 

FOR THE FILLING

  • 1 cup grated gruyere or 1 cup Swiss cheese
  • 1 tablespoon chopped fresh sage
  • 1 tablespoon unsalted butter
  • 1⁄2 cup buttermilk
  • 1⁄2 cup heavy cream
  • 1⁄2 cup zucchini, very finely chopped
  • 1⁄2 lb bacon, cooked crisp
  • 1⁄2 teaspoon salt
  • 1⁄4 cup frozen sweet peas, thawed
  • 1⁄4 teaspoon pepper
  • 3 large eggs

DIRECTIONS TO MAKE FARMER’S QUICHE

 

Step 1

In a saucepan, combine rice, butter, and salt with 2 cups of water.

Step 2

Cook rice for 40 minutes, without lifting the lid, until it is tender (bring mixture to a boil, cover, and lower heat).

For 5-10 more minutes, cover and leave rice off heat.

Step 4

Stir 2 cups of the cooked rice with 1/4 cup melted butter, 1 egg, and 2 cups of the leftover rice together (reserve the remainder for another use).

A 9-inch glass pie pan should have mixed rice pressed equally into the bottom and sides of it.

Combine lightly three eggs, buttermilk, heavy cream, chopped sage, salt, and pepper in a small mixing bowl.

Lay out some bacon crumbles at the base of the rice crust.

When placing the peas on top of the bacon, spread the filling evenly before adding the chopped zucchini.

Place the egg mixture on top of the bacon and vegetables.

Add some shredded cheese on top.

Add buttery specks all over.

Bake for 30-35 minutes at 350°F, or until the quiche’s top is golden brown and domed, and a thin knife can be inserted and retrieved cleanly from the center.
