How To Make a Healthy Egg Salad Sandwich

INGREDIENTS
- 2 chopped scallions (white and green parts)
- 2 hard-boiled eggs
- 2 pieces lettuce (I prefer romaine)
- 2 tablespoons Dijon mustard
- 4 slices whole grain bread, toasted
- salt and pepper
DIRECTIONS
Step 1
Use the back of a fork to mash the egg yolk together with the mustard until a thick paste forms.
Step 2
Stir in the chopped scallions and chopped egg white, ensuring they are well combined.
Step 3
Add salt and pepper to the mixture according to your taste preferences.
Step 4
Take 2 slices of bread and divide the egg mixture, spreading it evenly on top of each slice.
Step 5
Place lettuce leaves over the egg mixture on one slice of bread.
Step 6
Cover the lettuce with the remaining slices of bread to complete 2 sandwiches.
