How To Make Tomato & Egg Muffin

INGREDIENTS

  • 1 small tomatoes, sliced thinly
  • 2 eggs
  • 2 multigrain English muffins, split
  • 2 teaspoons balsamic vinegar

 

DIRECTIONS

 

Step 1

Gently simmer the water in a pan, and poach the eggs until done.

Step 2

Toasted muffins can be made in the meantime.

Step 3

The tomato should be divided between two muffin halves; vinegar should be sprinkled on top, followed by eggs, then the remaining muffin halves.
