How To Make Mojito Shrimp Taco Cups

INGREDIENTS

 

SHRIMP MARINADE
  • 1 cup fresh mint leaves
  • 1 lb large shrimp, peeled and deveined
  • 1 lime, skin on, cut into 1-inch dice
  • 1 tablespoon olive oil
  • 1⁄4 cup rum
  • 2 tablespoons sugar
  • kosher salt
TACO CUPS
  • 12 square wonton wrappers
  • 3 tablespoons canola oil or 3 tablespoons olive oil
MANGO AVOCADO SALSA
  • 1 avocado, cut into 1/2-inch dice
  • 1 cup mango, diced
  • 1⁄2 cup fresh mint leaves, chopped
  • 2 tablespoons finely chopped red onions
  • 2 tablespoons lime juice
  • 2 tablespoons rum
  • kosher salt & freshly ground black pepper
GARNISHES
  • 2 ounces queso fresco crumbled
  • 1⁄4 cup fresh mint leaves, roughly chopped
  • 1 lime, cut into wedges

 

DIRECTIONS

Step 1

To make the shrimp marinade, mix mint leaves, rum, sugar, oil, lime pieces, and 2 teaspoons of salt in a medium bowl.

Step 2

Use a muddler or wooden spoon to mash the ingredients, ensuring you release the juices from the limes.

Step 3

Add the shrimp to the marinade and stir well, then cover and refrigerate for 20 to 30 minutes.

Step 4

Begin preparing the taco cups by preheating your oven to 350 degrees Fahrenheit.

Step 5

Brush both sides of each wonton wrapper with oil, then gently press them into the wells of a muffin tin, shaping them to fit the bottoms and sides.

Step 6

Bake the wonton wrappers until they turn lightly golden and crisp, which should take about 8 to 10 minutes.

Step 7

Immediately remove the crispy cups from the muffin tin and place them on a rack. Also, preheat your broiler.

Step 8

For the mango avocado salsa, combine mango, mint leaves, lime juice, red onion, rum, and avocado in a medium bowl, and season with salt and pepper. Set the salsa aside.

Step 9

Remove the shrimp from the marinade and arrange them on a baking sheet.

Step 10

Broil the shrimp until they are fully cooked, usually 2 to 3 minutes per side.

Step 11

Now, for the garnishes, spoon the mango avocado salsa into each taco cup and top them with shrimp.

Step 12

Enhance the presentation with chopped mint and queso fresco, and don’t forget to serve lime wedges on the side.

Step 13

Your delightful shrimp taco cups are ready to be enjoyed!
