How To Make Turkey And Brie Puff Pastry Bites
- 1 tablespoon honey
- 1⁄2 piece butter puff pastry, thawed but still cold
- 24 fresh parsley leaves
- 2 tablespoons Dijon mustard
- 3 tablespoons mayonnaise
- 5 ounces of leftover roast turkey breast, finely diced
- The packaging should contain one (200g) package of double cream brie cheese, which should be rinsed and then cut into 24 equal portions
Place the puff pastry on a clean work surface. Roll the pastry out in one direction to form a rectangle. Then, cut the rectangle into 24 equal pieces.
Take a 24-cup mini muffin pan and press each pastry piece into the cups, allowing some overhang. Place the muffin pan in the freezer for 10 minutes to firm up the pastry.
In a small bowl, stir together the turkey and mayonnaise until well combined.
Remove the muffin pan from the freezer, and evenly divide the turkey mixture among the cups.
Top each cup with a piece of Brie, pressing it down slightly into the filling.
Preheat your oven and bake the pastry bites in the center of the oven for 20 to 22 minutes. Keep an eye on them and remove them when the pastry is golden on the bottom and the cheese is melted and starting to brown.
While the pastry bites are baking, prepare the Dijon and honey drizzle. In a small bowl, stir together the Dijon mustard and honey until smooth.
Once the pastry bites are done, take them out of the oven, and carefully transfer them to a long platter.
Drizzle the Dijon and honey mixture over the top of the pastry bites, and garnish with fresh parsley leaves.
