Preheat the oven to 350°F.
The beef should be browned before serving.
Mix the beef mixture with 1/2 cup enchilada sauce and one cup cheese.
Prepare a 13 x 9 baking dish by spreading 1/2 cup of sauce on it.
Divide the beef mixture among the tortillas and spoon about 4 tablespoons into each.
Make sure the seam side is on the bottom of the baking dish, and then roll it up.
Add the remaining cheese and sauce to the top.
Melt the cheese in the oven for about 20 minutes.
