Preheat your oven to 400°F (200°C). Line two rimmed baking sheets with parchment paper.
Take one sheet of puff pastry and unroll it. Cut the pastry into four even strips. Then, divide each strip into four parts, creating a total of 16 squares.
Place the 16 squares on the prepared baking sheet. Score each square 2 or 3 times with a fork, and brush them with egg wash.
Bake the squares in the preheated oven until they turn golden and puff up, which usually takes about 14 minutes. Repeat the same process with the remaining sheet of puff pastry. Let the baked squares cool for 5 minutes.
Spread approximately 1 1/2 teaspoons (7 mL) of ricotta cheese on each square.or 5 minutes.
On 16 of the squares, place pear slices, and walnuts, and drizzle some honey over them.
On the remaining 16 squares, top them with arugula, prosciutto, and sundried tomatoes.
