– 1 (12-ounce) jar of beef gravy – 1 (14 1/2 ounce) can of diced tomatoes – 1 cup broccoli, cut up and cooked – 1 cup diced carrot, cooked – 1 tablespoon Italian seasoning – 1 tablespoon olive oil – 1⁄2 onion, chopped – 2 cups mashed potatoes – 2 garlic cloves, minced – 2 tablespoons chopped parsley – 2 tablespoons parmesan cheese – 8 slices roast beef, cooked (sliced about 1/2-inch thick)
Ingredients
Add gravy, tomatoes, and Italian seasoning to the onions and garlic in a medium saucepan and heat for one to two minutes.
Place potatoes and broccoli in a skillet, heat, then combine with carrots. Spread the potato mixture onto each roast beef slice and roll up. Spread nonstick cooking spray over the beef rolls and place in a baking dish.
Serve beef rolls topped with gravy mixture, covered for twenty to twenty-five minutes. Remove cover and sprinkle parsley and parmesan over rolls before serving.
