Begin by placing the eggs in a pot and covering them with water. Bring the water to a rolling boil. Once it reaches a boiling point, turn off the flame and cover the pot with a lid. Let the eggs sit aside for twenty minutes to complete the hard-boiling process.
After the eggs have cooled, peel off and discard all of the eggshells. Take three of the hard-boiled eggs and remove the yolks, discarding the whites. For the remaining hard-boiled eggs, carefully slice them lengthwise and gently remove the yolks.
Put all the yolks in a bowl. Finely chop some parsley and add it along with the other ingredients to the egg yolks. Use a fork to thoroughly combine everything until the mixture reaches a smooth consistency. If needed, add olive oil for a smoother texture, and taste the mixture for seasoning, adjusting as desired.
Now, transfer the egg yolk mixture to a plastic bag, maneuvering it to one corner of the bag. Twist the excess part of the bag to push the yolks down to the corner.
Using scissors, snip a small opening in the corner of the plastic bag. Fill the egg white halves with the yolk mixture by gently squeezing the bag.
To add a final touch, garnish the deviled eggs with finely chopped scallions or parsley.
