Cut each half into eights and place them cut-side down in a pan sprayed with non-stick cooking spray that is large enough to hold the bagels evenly. Spread each half with Laughing Cow Cheese evenly.
Mix eggs, vanilla, maple syrup, and pecans in a small bowl; pour over bagels.
Remove from the refrigerator 30 minutes before baking and place on the counter. Next morning, cover with foil and place in the refrigerator overnight.
Place the covered dish in the oven and cook for 30 minutes. Then uncover, sprinkle generously with cinnamon sugar, and bake for another 20 to 30 minutes or until firm and lightly browned.
Warm maple syrup is served with this dish.
