How To Make Tuscan Chicken Stew

INGREDIENTS
- 1(15 1/2 ounce) can cannellini beans, rinsed and drained (or other white beans)
- 1(7-ounce) bottle of roasted red bell peppers, drained and cut into 1/2-inch pieces
- 1 lb boneless skinless chicken breast, cut into 1-inch pieces
- 1⁄2 cup reduced-sodium fat-free chicken broth
- 1⁄2 teaspoon dried rosemary, crushed
- 2 teaspoons crushed garlic
- 2 teaspoons olive oil
- 3 1⁄2 cups torn spinach
DIRECTIONS
Step 1
Put chicken in a bowl, add rosemary, salt, and pepper, and toss to combine well.
Step 2
Over medium-high heat, heat oil in a large nonstick frypan.
Step 3
Sauté for 3 minutes with chicken mixture.
Step 4
Sauté garlic for 1 minute.
Step 5
Stir in beans, bell peppers, and broth.
Step 6
During the last 10 minutes of simmering, cover and reduce heat.
Step 7
Simmer for 1 minute after adding spinach.
