How To Make Savory Breakfast Tart

INGREDIENTS
CRUST
- 1 1⁄2 cups all-purpose flour
- 1⁄2 teaspoon salt
- 4 tablespoons ice water
- 8 tablespoons butter
TART FILLING
- 1 cup heavy cream
- 1 egg
- 1 large yellow onion
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1⁄2 teaspoon black pepper
- 1⁄4 cup bacon bits
- 1⁄4 lb gruyere cheese
- 1⁄4 teaspoon nutmeg
- 2 egg yolks
TOMATO BALSAMIC JAM
- 1 garlic clove
- 1 large red onion
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1⁄2 cup Granny Smith apples
- 1⁄2 teaspoon black pepper
- 1⁄4 cup balsamic vinegar
- 28 ounces crushed tomatoes
DIRECTIONS
CRUST
- The oven should be preheated to 400 degrees.
- Mix flour and salt with cooled butter that has been chopped into 1/4-inch pieces. Add water until the dough just barely holds together.
- Wrap in cling film, form into a 5″x5″ disc, and refrigerate for 15 minutes in the refrigerator.
- Using the “lift and pinch” technique, press the dough into the tart pan. Make three to four fork pokes. Fill with baking beads or grains and line with parchment paper or tin foil.
- After 15 minutes of baking, take the parchment paper and baking beads off, and bake for a further five minutes.
- Set apart for cooling.
FILLING
- Slice up a yellow onion and cook it in oil until it turns caramelized. Get rid of the heat.
- Gruyere cheese shavings are used to line the tart crust’s bottom.
- Add slices of bacon on top.
- After cooling, place the sauteed onions on top of the bacon layer gently.
- Heavy cream, egg yolks, salt, and pepper are all whisked together.
- Pour the egg mixture into the tart crust until it reaches the top border.
- On top, grate some parmesan.
- The tart should be baked for 20 to 25 minutes.
- Cool completely before serving.
TOMATO BALSAMIC JAM
- Dice the garlic and onions. Grate the apple using a box grater.
- In a large saucepan, cook the onions and garlic for about 5 minutes, or until the onions are transparent.
- Add tomatoes, apple, vinegar, salt, and pepper.
- Jam should have the consistency of paste after about 45 minutes of simmering on low heat with periodic stirring.
- Get rid of the heat. Apply a thin layer of jam in the shape of a ring over the tart once it has cooled. (Optional) Add arugula as a garnish.
