How To Make Pork Medallions With Cranberries And Apples

 

INGREDIENTS

  • 1(1 lb) pork tenderloin, trimmed
  • 1 1⁄2 teaspoons cornstarch
  • 1 cup thinly sliced peeled apple
  • 1 tablespoon brown sugar
  • 1 tablespoon flour
  • 1⁄2 cup apple juice
  • 1⁄2 cup chicken broth
  • 1⁄2 cup finely chopped onion
  • 1⁄2 teaspoon salt
  • 1⁄4 teaspoon dried rubbed sage
  • 1⁄8 teaspoon fresh coarse ground black pepper
  • 3⁄4 cup fresh cranberries
  • 4 teaspoons olive oil, divided
  • cooking spray
  • fresh sage sprig (optional)

 

DIRECTIONS

 

Step 1

In a small bowl, combine the first seven ingredients and stir well.

Step 2

Make 8 pieces of pork by cutting it crosswise.

Step 3

Roll or mallet each piece into a 3/4-inch thickness.

Step 4

Shake off excess flour from each piece after coating it with flour.

Step 5

In a large nonstick skillet coated with cooking spray, heat three teaspoons of olive oil.

Step 6

During the last two minutes of sauteing, add pork and brown it on both sides.

Step 7

Remove it from the pan.

Step 8

Pour some 1 teaspoon oil into the pan.

Step 9

When the onion is golden brown, cover, reduce heat, and stir frequently over low heat for 5 minutes.

Step 10

Add apple, cranberries, and juice mixture to pork in the pan.

Step 11

The cranberries should pop and the pork should be cooked through after 3 minutes of simmering. Occasionally stir.

Step 12

Sage sprigs garnish the garnich.
