SWEET AND SOUR SAUCE
- 1 cup white sugar
- 1 teaspoon soy sauce
- 1⁄2 cup brown sugar, lightly packed

CHICKEN BALL BATTER
- 1 1⁄3 cups cold water
- 1 -2 teaspoon sesame oil
- 1 cup all-purpose flour

- 1⁄2 teaspoon garlic powder (garlic lovers add 1 teaspoon)
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 2 teaspoons sugar
- 8 chicken breasts, cut into bite-size pieces

Step 1
To prepare the sweet and sour sauce, combine the first 5 ingredients in a saucepan until well combined. In a separate cup or bowl, whisk cold water or pineapple juice with cornstarch until smooth, then vigorously whisk it into the ketchup mixture. Bring the mixture to a boil, stirring or whisking constantly over medium-high heat until it becomes bubbly.

Once it reaches a boil, reduce the heat to medium-low and continue to simmer and mix until the sauce thickens. This may take a few minutes, so be patient. Once thickened, remove the saucepan from the heat and allow it to sit at room temperature while you make the chicken balls. If preferred, you can cool the sauce to room temperature and refrigerate it until ready to use.

Now, to make the chicken balls, start by combining flour, cornstarch, baking powder, baking soda, and garlic powder in a large bowl.
