How To Make Grilled Chicken Breast With Spicy Pineapple Mango Salsa

INGREDIENTS
CHICKEN
- 4 large boneless chicken breasts
MARINADE
- 1 pinch salt
- 1 tablespoon black pepper
- 2 tablespoons extra virgin olive oil
- 2 tablespoons fresh minced thyme
- 2 tablespoons minced fresh garlic
- pineapple juice, from crushed pineapple
SALSA
- 1 (15 ounce) can crush pineapple, drained (save the juice for marinade)
- 1 chipotle chile, seeded & chopped
- 1 garlic, minced
- 1 mango, diced
- 1 small red pepper, diced
- 1 teaspoon grated fresh ginger
- 1⁄2 cup fresh cilantro or 1/2 cup fresh parsley leaves, coarsely chopped
- 1⁄2 vidalia onion, finely chopped
- 2 tablespoons lime juice
- salt, if needed taste before adding
DIRECTIONS
Step 1
In a ziplock bag, place boneless chicken breasts.
Step 2
Shake ingredients thoroughly before adding them to the marinade.
Step 3
After half an hour, chill.
Step 4
Oil the grill.
Step 5
5 minutes on high will heat the grill.
Step 6
Grill the chicken breast skin side down for 5 minutes on medium heat with the heat set to low.
Step 7
A second five minutes should be added to the cooking time after you turn the chicken.
Step 8
The chicken should be cooked for a further 5 minutes at medium-low heat.
