How To Make Eggs In Clouds

INGREDIENTS
- 1⁄4 cup bacon, cooked and crumbled
- 1⁄4 cup chives, chopped
- 1⁄4 cup parmesan cheese, grated
- 4 eggs
- pepper
DIRECTIONS
Step 1
Separate the eggs, placing the egg whites in a large bowl and the egg yolks in 4 separate small bowls.
Step 2
Whip the egg whites until they form stiff peaks.
Step 3
Gently fold in the cheese, chives, and bacon into the whipped egg whites.
Step 4
Spoon the mixture into 4 separate mounds on a baking sheet lined with parchment paper, creating a deep well in the center of each mound.
Step 5
Bake the mounds at 450 degrees Fahrenheit (230 degrees Celsius) for 3 minutes.
Step 6
After 3 minutes, carefully add 1 egg yolk to each well, and season with pepper.
Step 7
Continue baking until the egg yolks are just set, approximately 2 to 3 minutes.
Note: It’s important to keep a close eye on the yolks while baking to ensure they don’t overcook.
