How To Make Creole-style Pork

 

INGREDIENTS

  • 1 cup celery (sliced)
  • 1 cup tomato juice
  • 1 green bell pepper (chopped)
  • 1 tablespoon cornstarch
  • 1 teaspoon chili powder
  • 1 teaspoon lemon juice
  • 1⁄2 teaspoon sugar
  • 1⁄4 – 1⁄2 teaspoon ground red pepper
  • 2 cups hot-cooked rice
  • 3⁄4 lb lean boneless pork, stir-fried precut
  • 9 ounces frozen cut green beans (thawed)

 

DIRECTIONS

 

Step 1

Set aside 1/4 cup water as well as the tomato juice, cornstarch, chili powder, lemon juice, salt, sugar, and red pepper for the sauce.

Step 2

Heat LARGE SKILLET to medium-high heat and spray with cooking spray.

Step 3

Celery and thawed green beans should be stir-fried for about one and a half minutes or until tender-crisp.

Step 4

Stir fry pork until no longer pink for 2 to 3 minutes in a hot skillet or wok, adding oil if necessary. Remove the pork from the skillet and set aside.

Step 5

Cook and stir sauce until bubbly and thickened in a skillet or wok.

Step 6

In a mixing bowl, combine all ingredients and return the vegetables/pork to the bowl.

Step 7

Stir and cook for 2 minutes.

Step 8

With rice, serve.
