INGREDIENTS
- 4 green bell peppers, tops cut off
- 1 cup uncooked quinoa
- 1/8 cup fresh cilantro, depends on your taste
- 1⁄4 – 1⁄ 2 red onion, diced
- 1 teaspoon cumin
- 1 -2 minced garlic clove, depending on your taste
- 1 teaspoon oregano
- 3 tablespoons diced green peppers (Make sure the bell pepper tops are chopped up when you cut them off)
- 1(14 1/2 ounce) can black beans, drained
- 1(14 1/2 ounce) can of diced petite tomatoes, drained well
- 1 teaspoon chili powder
- 1⁄8 cup salsa
- 3⁄ 4 cup corn

DIRECTIONS
Step 1
For a softened bell pepper, boil it for three to four minutes in boiling water.
Step 2
Chicken broth should be used to cook Quinoa, NOT water!
Step 3
Saute onion tops, garlic, and garlic in a saucepan.
